First of all drop into the container:
```
docker exec -t -i nginx /bin/bash
```
Then configure and install your module:
```
/usr/local/bin/docker-php-ext-configure sockets
/usr/local/bin/docker-php-ext-install sockets
```
Now restart php-fpm:
```
supervisorctl restart php-fpm
```
